The grapes used for the cognac production are grown exclusively in a Delimited Region characterized by a temperate climate and a limestone soil. The Cognac Appelation is made of six growth areas or crus: Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois, and Bois Ordinaires.

The most used grape variety is Ugni Blanc characterized by a high acidity and a low degree of alcohol, which makes it perfect for distillation. The Pitaud Cognac is mainly made of Petite Champagne and Borderies that gives it great richness and finesse.
