    This last stage of the production process for the Pitaud Cognacs is extremely delicate. It is strictly reserved for the cellar master, who tastes and selects the eaux-de-vie of different ages and crus that are to be blended. He is the one who makes sure that the Pitaud Cognacs preserve the same qualities so appreciated by amateurs.

    The sweetness and the finesse of VS and VSOP, the roundness and the richness of XO, the complexity of the Extra or the aromatic strength of the Albert Pitaud are the result of a blending work made up of intuition and competence.
